What is Riesling? Riesling is a white wine grape from Germany’s Rhine region, prized for high acidity, aromatic flavors of lime, green apple, peach and honeysuckle, and a remarkable range of styles from bone-dry to lusciously sweet. It is grown in Germany, Alsace, Austria, Australia, Washington State and the Finger Lakes of New York.

Why Riesling matters

Riesling is widely regarded as one of the world’s great white grapes because it shows its birthplace so clearly. Planted on slate in the Mosel or limestone in Alsace, it tastes of that place, and it keeps its freshness as it ages. Top bottles can improve for decades, and even inexpensive Riesling offers a lot of character.

It is also one of the most misunderstood wines. Many drinkers assume all Riesling is sweet, but a large share is dry, and the best sweet examples are balanced by lively acidity so that they taste fresh rather than syrupy.

Where Riesling grows

Riesling prefers cool climates, where it ripens slowly and keeps its acidity. Each region has its own signature.

How to read a Riesling label

Sweetness is the key to buying Riesling, and the label gives clues. In Germany, trocken means dry, halbtrocken means off-dry, and the quality levels Kabinett, Spätlese and Auslese reflect the ripeness of the grapes at harvest. Higher ripeness often means more sweetness, though some producers make dry wines at those levels. Beerenauslese and Trockenbeerenauslese are rare, very sweet dessert wines.

Alcohol is another clue. Lower alcohol, around 8 to 10 percent, usually signals more residual sugar, while 12 to 13 percent usually means a drier style. Many producers outside Germany also print a sweetness scale on the back label. Our wine sweetness scale and guide to dry versus sweet wine explain more.

What Riesling tastes like

Young Riesling smells of citrus blossom, green apple, lime and white peach. Warmer sites add apricot and tropical fruit, and aged bottles develop honey, beeswax and a savory note often described as petrol or kerosene, which fans consider a mark of maturity. Riesling is typically light to medium in body, with high acidity that makes it refreshing even when it is sweet.

How to serve Riesling

Serve Riesling well chilled, at about 45 to 50°F (7 to 10°C), with sweeter styles toward the cooler end. A white wine glass with a slightly tapered rim concentrates the aromas. Everyday bottles are best within a few years, while quality German and Alsace Riesling can age for twenty years or more.

How to choose a Riesling

Decide what you want in sweetness, then choose by region. For a clean, dry white to pour with dinner, look to Alsace, Australia or dry German bottles marked trocken. For a lightly sweet, low-alcohol glass, try a Mosel Kabinett or Spätlese.

Age-worthy treasures

Estates such as Egon Müller, J.J. Prüm and Dönnhoff make long-lived wines from the Mosel and Nahe that are sought after by collectors.

What to eat with Riesling

Riesling is a famously flexible food wine. Off-dry styles calm the heat of Thai, Indian, Szechuan and other spicy dishes, and their acidity cuts through rich, salty foods like pork and ham. Dry Riesling suits shellfish, sushi, roast chicken and creamy sauces, as well as fresh and washed-rind cheeses.

Frequently asked questions

Is Riesling sweet or dry?

It can be either. Riesling is made in styles from bone-dry to very sweet. Check the label for words like trocken (dry), halbtrocken (off-dry) or a sweetness scale, and note that lower alcohol often means more sweetness.

Is Riesling a good wine for beginners?

Yes, especially an off-dry Riesling, which is aromatic, light and refreshing. Our beginner guide and Wine IQ Quiz can point you to other styles.

Why does Riesling taste like petrol?

As Riesling ages, it can develop a savory, kerosene-like aroma. This is a natural result of aging and is considered desirable by many fans, but young bottles usually taste of fresh citrus and orchard fruit.

What does Kabinett mean on a German Riesling?

Kabinett is the lightest ripeness level in Germany’s quality system. Wines labeled Kabinett are usually light, crisp and low in alcohol, and can be dry or off-dry.

What food goes best with Riesling?

Spicy Asian food, pork, ham, shellfish, sushi and roast chicken all pair well. Off-dry Riesling is especially good with spicy dishes.
