Pahlmeyer Winery was founded in 1986 by Jason Pahlmeyer, a Napa attorney who started making wine as a personal project before the quality of what he was producing made commercial release an obvious next step. Pahlmeyer built his reputation initially on Chardonnay, working with fruit from cool-climate sites including Caldwell Vineyard and others in the hills east of Napa, and producing a wine of exceptional richness, depth, and longevity that regularly appeared on top restaurant wine lists and earned some of the highest scores given to California Chardonnay. The Cabernet Sauvignon drew equal attention, and the Pahlmeyer brand became a fixture in serious Napa Valley collections through the 1990s and 2000s.
An Attorney Who Made Great Chardonnay
Jason Pahlmeyer came to winemaking through his legal career in Napa Valley rather than through viticulture or enology. His proximity to the valley’s winemakers and his long exposure to great wine gave him strong opinions about what he wanted to make, and when he began producing wine in 1986, he focused from the start on the very top tier of quality rather than the accessible middle. His early Chardonnay, produced with consulting winemaker John Kongsgaard before Kongsgaard departed to start his own label, attracted immediate critical attention and established the Pahlmeyer brand as a serious collector proposition. The Cabernet Sauvignon from Napa Valley sources followed, and the combination of the two wines made Pahlmeyer a consistent presence on top restaurant wine lists throughout the 1990s.
The Pahlmeyer Chardonnay became one of the reference points for understanding how rich and long-lived great California Chardonnay could be.

Start the quizVineyard Sources and the Winemaking Approach
Pahlmeyer works with a network of Napa Valley vineyard sources rather than a single estate, selecting the best blocks from cool-climate sites for the Chardonnay and warmer benchland and hillside sites for the Cabernet. The Chardonnay has historically been sourced from the volcanic hills east of Napa near the Coombsville and Wild Horse Valley areas, where cool temperatures and volcanic soil produce a Chardonnay of unusual depth and aging potential. The Cabernet draws on multiple Napa appellations with an emphasis on mountain and benchland fruit that provides structure and concentration. The winemaking approach favors minimal intervention and allows the natural character of the fruit to express itself in the wine.
The Wine Portfolio: Pahlmeyer and Jayson
The Pahlmeyer flagship tier includes Chardonnay and Cabernet Sauvignon, both built for serious aging and priced in the premium collector range. The Chardonnay is the most unusual and often the most acclaimed of the two, combining the richness of a warm-climate California white with the mineral depth and freshness of cool volcanic hillside fruit. The Cabernet Sauvignon is a structured Napa Cab built for 10 to 20 years of development. The Jayson label, named for the founder, was developed as a more approachable and more affordably priced entry point into the Pahlmeyer house style, producing Chardonnay, Pinot Noir, and Merlot under the Jayson name for earlier drinking.

The Pahlmeyer Chardonnay, with its combination of richness and mineral freshness, is one of the most food-flexible great California whites. The wine’s texture and depth make it an excellent companion for butter-poached lobster, roasted halibut with beurre blanc, seared scallops with cauliflower puree, and rich pasta dishes including truffle risotto and butternut squash pasta. The weight of the wine handles fat-rich preparations that would overwhelm a lighter white. The Cabernet Sauvignon pairs with the standard high-quality red meat preparations: prime rib, dry-aged beef, lamb rack, and braised preparations with deep, reduced sauces. The Jayson wines, being more approachable, pair well across a broader range of casual preparations.
