Hourglass Wine

A Napa Valley estate built around the Bello Vineyard on the Silverado Trail, where Jeff and Carolyn Smith produce small-lot Cabernet Sauvignon and Merlot from a site that combines the minerality of volcanic hillside soils with the warmth of the valley floor.

Hourglass Wine was founded in 2002 when Jeff Smith, a real estate developer, and his wife Carolyn purchased the Bello Vineyard property on the Silverado Trail and set out to produce wines that expressed what that particular piece of Napa Valley ground could do. The name comes from the hourglass shape of the property on the geological survey maps, and it also reflects the time-bound nature of great winemaking: no amount of technology can substitute for the patience required to let a vineyard mature and let a wine develop. Jeff Smith assembled a team that included respected Napa winemakers and brought in David Abreu to manage the farming, and the resulting Cabernet Sauvignon and Merlot from the Bello Vineyard earned rapid critical recognition.

The Bello Vineyard and Its Story

The Bello Vineyard property on the Silverado Trail had been farmed before Jeff and Carolyn Smith purchased it in 2002, but it had not been treated as a prestige site deserving of the kind of intensive viticultural attention that the best Napa estates were receiving. Smith brought in David Abreu, the valley’s most respected vineyard manager, and invested in understanding the soil profiles, drainage patterns, and microclimatic conditions across the property before making significant changes to the farming. What they found was a vineyard with genuinely distinctive volcanic and volcanic-derived soil components that created better drainage and mineral character than typical Napa alluvial sites, combined with a location warm enough to ripen Cabernet fully and cool enough to preserve freshness and aromatic complexity.

The Bello Vineyard on the Silverado Trail produces Cabernet of unusual mineral depth and precision for this stretch of Napa, reflecting the volcanic soil influence that distinguishes the site.

Silverado Trail Terroir and Volcanic Influence

The Silverado Trail runs along the eastern side of Napa Valley, where the terrain begins to rise toward the hills and the soils carry more volcanic influence than the deeper alluvial benchlands to the west. The Bello Vineyard sits in this zone, with a soil profile that includes volcanic ash, volcanic loam, and some gravel components that provide exceptional drainage and contribute a mineral character to the wines. The site also benefits from slightly cooler mornings and evenings than the valley floor to the west, helping the Cabernet retain natural acidity and aromatic complexity alongside the concentration that comes from the warm afternoon sun.

The Wine Portfolio: Bello Vineyard and Beyond

Hourglass produces the Bello Vineyard Cabernet Sauvignon as the estate flagship, a wine built from the most distinctive blocks of the property and aged in French oak for 20 or more months before release. The Hourglass Napa Valley Cabernet is a broader-sourced wine that draws on Bello Vineyard fruit alongside other Napa Valley sources, designed to show the house style at a slightly larger production scale. The winery also produces an HG III, a value-oriented Napa red blend, and a small-lot Merlot when the variety performs well in the Bello Vineyard blocks.

Food Pairing with Hourglass Cabernet

The mineral-driven, precisely structured Bello Vineyard Cabernet from Hourglass is a food wine built for the table. The volcanic soil influence adds a mineral quality to the dark fruit that pairs particularly well with preparations involving earthy ingredients: a dry-aged ribeye with bone marrow butter, a braised short rib with truffle enrichment, or a lamb rack with herb crust and roasted root vegetables. The mineral character also works alongside umami-rich preparations including aged Parmigiano-Reggiano, wild mushroom risotto, and preparations involving concentrated meat stocks. The Merlot, when produced, pairs well with duck confit, mild braised preparations, and mushroom-heavy dishes.
